1 chicken
\n4 tablespoons extra virgin olive oil
\n1 onion
\ntwo sprigs of parsley
\n1 sprig of rosemary
\n1 stalk celery
\n1 clove of garlic
\n1 bay leaves
\n\u00bd cup dry red wine
\n200 grams of tomato sauce
\nsalt and pepper
\nblack olives<\/p>\n
Preparation<\/p>\n
Chop the parsley and rosemary, cut the celery and onion into thin slices and crush the garlic.<\/p>\n
Put the oil in a large skillet, brown the onion and other herbs, except the bay leaf, over low heat for about 10 minutes.<\/p>\n
When the vegetables are browned add the chicken pieces, season with salt and pepper.<\/p>\n
Cook the chicken for about 20 minutes. Add the bay leaf and saut\u00e9 a few minutes more.<\/p>\n
Add the wine, stir, raise the heat to evaporate completely. Combine the tomato sauce and olives, cover the pan and cook over low heat.<\/p>\n
